Amy the chef at Parliament Hill Lido has to ration this marmalade, keeping a check on customers who bulk buy, as soon after the Seville orange season ends in February it sells out. It’s replaced by other seasonal jams — forced rhubarn and ginger (another short season), strawberry of course, and a large production of Quince jam in September-October from one very productive tree. FULL DISCLOSURE some batches were made when Amy was self isolating in March and a bit runnier than usual. Still fine we think but will refund or replace on request ..
