Amba preserve

Description

We first heard about Amba from a Syrian guy running a hardware shop who sold us propane gas for our very busy Whitecross Street market stall. It is what the eastern Arab world eats with falafel and is really an Indian green mango pickle. It will have been brought to Iraq either through Iraqi Jewish traders or as a result of the period of British domination during the post World War 1 mandate. We make as much as we can given the limited availability of unripe mangoes in the markets.
